This pizza looks and tastes absolutely AMAZING and would make the perfect addition to your Mother’s Day menu.

Ingredients:

Base:

  • 150g whole almonds
  • 15  dates (no stones)
  • 2 tbsp coconut oil (melted)
  • 1 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract

Topping:

  • 110g cream cheese
  • 80g greek yogurt
  • 1/2 tsp orange juice
  • 1/4 tsp orange zest
  • 1/4 tsp vanilla extract
  • fruit to top

Method:

  1. For base: Blend almonds until smooth.
  2. Add dates, coconut oil, cocoa and vanilla and blend until smooth.
  3. Pour mixture into circle pan and flatten.
  4. Chill for 30 minutes.
  5. For topping: Combine cream cheese, yoghurt, orange juice and zest and vanilla in a bowl and mix with a spoon.
  6. Take base out of fridge and remove from pan.
  7. Spread topping onto base.
  8. Decorate with fruit.
  9. Serve!

  • I love nothing better than a fresh food salad and fruit kebabs dipped in yoghurt are also delicious for dessert.


    • And to add a wicked twist some warm dipping chocolate for the not so healthy days!

  • I love a sticky date pudding or golden syrup dumplings in winter and a Pavlova with strawberries on top or the old fashion bread and butter pudding with sultanas to use up excess bread or a tirumisu desert.
