Although I cook frequently in my slow cooker, I am only just discovering using it for desserts and baking. I found this yummy cinnamon scroll recipe that I just had to share.

Slow cooker cinnamon scrolls

Ingredients:

Dough:

  • 1 egg
  • 2 and 3/4 cups of plain flour
  • 1/2 cup sugar
  • 2 and 1/4 teaspoons of yeast
  • 3 tablespoons of unsalted butter melted
  • 3/4 cup milk

Filling:

  • 5 tablespoons of unsalted butter at room temperature
  • 1 tablespoon of sugar
  • 1/3 cup sugar

For icing:

  • 1 and 1/4 cups of sugar
  • 2 tablespoons of maple syrup
  • 2 tablespoons of milk

Method:

  1. Dough: In a saucepan, warm the milk over low heat until lukewarm. Pour the warm milk into the bowl and stir in the yeast and 1 teaspoon sugar. Cover with a tea towel and let sit until the yeast is foamy, this should take about 5-10 minutes. Beat in the remaining sugar, salt, butter, egg, and flour until combined. Dough is ready when it gently pulls away from the side of the bowl and has an elastic consistency.
  2. Turn the dough out onto a lightly floured surface and knead the dough for 2 minutes. Let the dough rest for about 10 minutes.
  3. Line slow cooker with baking paper.
  4. Filling: Roll the dough out in a 14 x 8 inch rectangle. Spread the softened butter on top. Mix together the cinnamon and sugar and sprinkle it all over the dough. Roll up the dough tightly, then cut into 12 pieces and place them inside a lined slow cooker. Place a paper towel right under the lid of the slow cooker — this will help keep condensation off the cooking rolls.
  5. Turn your slow cooker on high and cook scrolls for 2 hours.
  6. Remove scrolls from slow cooker.
  7. Glaze: Before serving, top your cinnamon rolls with glaze. Whisk the sugar, maple syrup, and milk together until smooth. Drizzle over the warm rolls.
  8. Eat!

Yum, I’ll be baking some this weekend.
