Hello!

The recipe calls for the essence which I can’t find anywhere. Do you think a sachet of jelly crystals would work instead?

  • Well strawberry essence is liquid so if you replace it with Jelly crystals ( which is solid ) it may go hard and/or lumpy as the gelatine will set . I wouldn’t do it if you want the recipe to turn out properly .


  • Thank you to everyone for your replies. I used the jelly crystals to make a strawberry cheesecake. It worked perfectly and it was so delicious. The feedback from my tasters (neighbour and a friend as well as family) was wonderful.

  • I have used jelly crystals in a cheesecake with cream cheese and only a tiny but of hot water to dissolve them (lime cheesecake) and it was delicious!

  • Thanks to everyone who replied. Unfortunately living in a rural district you can’t get certain ingredients. I’ll try using the jelly crystals and see how the cheesecake goes.

  • I have used jelly crystals in place of gelatine before but please realise that jelly crystals have a very high amount of sugar.
    Strawberry essence is in the cake mix aisle and is with the dyes and cake decorations. Coles and Woolworths have it where I come from.

  • If you are having trouble locating it at your supermarket, maybe try local markets and try the speciality deli shops – they often have these ingredients and can order/source them for you too.
