  • Best duck recipe I’ve come across is duck a l’orange. We had ducks and chickens in our yard as kids so we ate a lot of poultry!

  • My brother in law bought a couple of ducks on special not long ago I think from Woolies or Coles and roasted them in the oven himself . I think he just put some herbs, spices, oilive oil and just baked them in the oven . I would look up a recipe as duck might be a bit more specific to cook properly and he said it tasted good. It does look different from other roasts meat so maybe if you can buy one on special , try it out .

  • Roast duck and citrus salad
Add “Roast duck and citrus salad” to FavouritesAdd to Favourites
    2 duck legs
salt and freshly ground black pepper
good sprinkling of Chinese five-spice powder
    1-2 fresh bay leaves
    2 pink grapefruit
    2-3 oranges
large handful peppery watercress, very large stalks removed
    Preparation method
Preheat the oven to 200C/400F/Gas 6.
Place the duck legs into a roasting tin and season well with salt and freshly ground black pepper. Rub the five-spice powder into the skin of the duck legs, then place a bay leaf or two on top of the meat.
Cook in the oven for about one hour, until the skin is very crisp and the meat falls away from the bone.
Meanwhile, prepare the salad by peeling the grapefruits and oranges by cutting the ends off, placing them on a chopping board cut-side down, then running a sharp knife down the side of the fruits to remove the skin and white pith. Then run a knife down in between the membranes to segment the fruits, catching any juice in a bowl.
When the duck is cooked, strip the meat away from the bone and cut into bite-sized chunks. Toss the watercress with the segmented fruits and the fruit juice and serve topped with the duck meat.
To make a little dressing, drain off the fat from the roasting tin (you can keep it in the fridge and use it to make roast potatoes). Swirl a little of the juice from the oranges and grapefruit into the pan to lift the crusty bits from the bottom, and pour over the salad.

  • Thanks; will give it a go and watch the cook times.

  • This sounds delicious and fairly easy, will give it a try.

  • Thanks for asking this question and for the answers. How long is the duck cooked?

  • Thanks for that. I have a duck to cook over Christmas too and have never done it before. This sounds easy and delicious.

  • Hi,

I used to work in kitchens and roast duck was my favourite thing to do on the prep list! (So easy)
Depending on how you have the duck, I would assume that it’s come plucked and frozen?

Get a sharp knife and chop off the neck.
Cut an orange in half and put it into the duck.
Cover the duck with hoisin sauce by rubbing it on with a spoon or your hands (depending on how into this you’re getting lol)
Cover the baking dish with alfoil and cook on about 160ish. Keep an eye on it, when its almost done uncover and let the skin crisp up.
