Hello!

I’m planning on making a cheesecake (the one from the latest MKR cookbook: yum!) but it will likely be too much for my husband and I to eat by ourselves in one go (I always trial new recipes on us first, before cooking it for a wider audience). So… Is it possible to freeze homemade cheesecakes? im worried that it won’t freeze properly, and/or it will form water crystals in the freezer and go soggy when we defrost it at a later date. Looking for people’s experience in this regard. Thanks!

  • I haven’t done this. Ours is gone by the second night. I imagine it would be fine if packaged properly so it wouldn’t have ice crystals as you can buy them frozen


  • Since you can buy them frozen in the store, I reckon it should be fine to freeze.


  • I imagine you can but my cheesecake is gone to quickly to freeze!


  • I often make cheesecake and if planning on freezing I prefer to make in individual serving sizes. It defrosts well (just leave in fridge overnight) but it could also be frozen in larger size.
    Never had any ice crystals etc but my recipe may be different :-)


  • How did it go? I’ve bought frozen ones but they might have a lot of junk in them to make them defrostable


  • Pretty sure you can. Could get different results depending on if it’s a baked cheesecake or not. Also consider the toppings or other ingredients in the cheesecake…..will also affect freezeability

    I was going to make a no bake cheesecake and wasnt sure how it would go…

  • Thankyou for this question, it is something I have wondered, I wonder if it would make a difference if it was a cooked cheesecake or uncooked one, also if decorated with cream etc, as I think the sara lee ones are cooked and with cream.

  • I freeze cheesecake and it is keeps well and still tastes good!


  • We used to freeze and thaw ours. It is best to eat it fairly quickly after it has thawed otherwise may go a bit soggy but it will still be edible. You can eat it either frozen or only partially thawed.

  • I figure that if Sara Lee can do it, so can you. If you’re worried about it going soggy on thawing, just eat if frozen. How good would that be?! Yum.
