Hello!

Mangoes are so abundant & cost effective at the moment – can anyone recommend some different recipes to use them up (rather than just scoring them & eating them !). I am after some great mango recipes!

    – mango
    – shredded BBQ chook
    – rice
    – Sweet and Sour Sauce

    – grill the chicken breast instead of using a BBQ chook
    – coconut rice instead of plain
    – chilli, fried shallots or macadamia nuts are nice garnishes

  • Mango mousse with honeyed mango chunks

    Ingredients
    For the mousse
    200ml/7fl oz double cream
    2 tbsp heather honey
    2 tbsp Greek-style yoghurt
    ½ mango, peeled, stone removed
    2 tbsp white wine
    For the honeyed mango chunks
    knob of butter
    ½ mango, peeled, stone removed, chopped
    2 tbsp honey
    Preparation method
    For the mousse, whisk the cream in a bowl until soft peaks form when the whisk is removed. Gently fold in the honey and yoghurt.

    Place the mango flesh into a food processor along with the wine and blend to a smooth purée. Fold the mango mixture into the cream.
    For the mango chunks, melt the butter in a frying pan and add the mango and honey. Fry for 3-4 minutes, or until the mango is tender and caramelised.
    To serve, place a chefs’ ring on a serving plate and spoon in the mango mousse. Remove the ring, then spoon over the honeyed mango and serve immediately.


  • yeah well i love mango chicken! my mum has a lot of trees, so she will make mango rollups. she also cuts the cheeks off and freezes them and they are so nice to eat on a hot day or even just chuck the frozen mango into a smoothie! if you have a lot, sell them!


  • Cook some basmati rice in water and coconut milk. When it’s ready mix it with diced fresh mango and toasted sesame seeds. It’s a favourite in our home!


  • you can make anything with mango – smoothies, cheesecakes, upside down cakes, slice up and chill in jelly, ice blocks (fruit, water or milk based), cold salads, use it with yogurt on some muesli for breakfast, add it your main meal for dinner with chicken or pork.
    I find the best site is TASTE. There are heaps of recipes. Type in mango and it come up with hundreds of recipes using that ingredient. Its endless!
