Hello!

I’m due with baby number 2 next month and would like some meal ideas or recipes of dinners that are easy to freeze. I’ve heard the usual pasta sauce and lasagne. Keeping in mind we also have a 2 year old. Thanks

  • spaghetti bolognaise, carbonara, soups and slow cooker meals are pretty good frozen. you kind of just have to try it out and see what freezes well. Maybe make up some roast chicken and vegie packs. Rice and mashed potaoes aren’t actually very nice when you thaw them out…trust me lol


  • Hi,

    You could make up some veggie/mince – you could use any other mince in this recipe – I used to use pork and chicken.

    Basically you can play with the recipe. All you need is a simple mixture.

    Mince
    Grated Veggies – Try carrots, zuchini
    Maybe some baby spinach, corn (lentils or beans may work well too – I haven’t tried this yet)

    Put it all in a food processor and blend together, add an egg and some flour (not too much) basically to make a nice consistancy for you to take out of the bowl and shape into chicken nugget or fish finger like shapes. Then you could just pan-fry (until browned and cooked right through) or you could add crumbs and cook.

    Then you can freeze and warm up in the microwave or oven.

    Very easy and as healthy as you want it to be.
    I love hidden veg!

    With a two year old, you might need to tone down any spices and seasoning in these recipes, but the recipes are easy, tasty and freeze well. Also, pre-prepare Pasta Bakes, with chicken or fish and vegies in them, as they freeze well, and are a complete meal in one, just defrost & pop into the oven to heat.

    A favourite with my Nanna was her Tuna Mornay (you could easily substitute chicken for the tuna if you prefer).

    NANNA’S TUNA AND CORN MORNAY

    2 cups medium-thick White Sauce (I make this with the juice drained off the tuna)
    450 gm tin Tuna in brine (drained)
    large tin Creamed Sweetcorn
    1 medium Onion (diced)
    150 gm Tasty Cheese (grated)
    Salt & Pepper to taste
    1/2 teaspoon Dry Mustard
    good pinch Turmeric
    2 Chicken Stock Cubes
    2 teaspoons Lemon Juice
    1 cup crushed Potato Crisps
    1/4 cup Grated Cheese (extra)
    – Make the white sauce, add onion, cheese, salt , pepper, mustard, turmeric, crumbled stock cubes and lemon juice, and mix well. Place in a saucepan and heat over moderate heat. Add drained tuna and creamed sweetcorn, and mix until well heated. Place in a greased casserole dish, and sprinkle crushed potato crisps over the top of the mornay, then the extra grated cheese. Place in a 180 degree Celsius oven for approximately 20 minutes until it’s heated through and topping is crunchy and golden.
    (If you don’t fancy tuna, make the mornay with diced cooked chicken. It’s also lovely with a tin of drained asparagus cuts added to the mix).
