    Apple muffins

  • I have an elderly Aunty who lives alone in a country area and seems to get a lot of neighbours call in. She lives in an area where a lot have lived since birth and there is a real community feeling about it. They check up on each other. She uses muffin mix to make slices and always freezes some of it. We have stayed with her for a few days on occasions. On one occasion she had a fresh one but that wasn’t going to be enough so she thawed some too which I didn’t know she had done until afterwards. I had a piece off each plate. After the neighbours left she asked us if I could tell the difference. Neither of us could. She then told us that the frozen one had already been partly thawed and then re-frozen recently. I was so surprised. Some she had frozen had butter icing on them. The icing tends to not keep its original flavour for too long.
