I have always made a boiled fruit cake that is moist. I do add a tin of crushed pineapple and the juice as well. Always turns out moist and yummy.
I agree with the fruit soaking – it will make it so moist and delicious.
I had to try trial and error and that is the best way to go with fruit cake.
Soak in pineapple juice and use crushed pineapple pieces in the mix.
My mums fruit cakes were always moist. She used to soak her fruit in alcohol. Not sure if this is what made them moist, but tastes good
