I’m not having any luck with my banana muffins! After following the recipe it ended up a flop!

  • My recipe has baking powder and baking soda. I find this helps but you need to sift it in otherwise you’ll get salty clumps.


  • Don’t overmix and often banana cakes and muffins need bi-carb soda to stop them being too dense.


  • My recipe has 1/2 teaspoon bicarbonate of soda and 1 teaspoon baking powder and 2 cups (300g) self-raising flour, Now sift these three ingredients in your mixing bowl add 1 cup mashed banana (about 2 bananas), 2 eggs, 1/2 cup (125ml) milk, 125ml vegetable oil. Mix with a wooden spoon. Fill your muffin tin/patty pan’s with 3/4 of the mixture. These will rise above and spill over a little just as you like them. Getting the right amount in the patty pan is a skill you can measure yourself.


  • Try not to overheat them, use a wooden spoon instead of an electric beater


  • I ALSO agree with the other two moms, try just stirring to combine the ingredients, do not over mix. Hope you can give them another try and let us know how they go. :-)


  • I agree with the other comment. Do not over mix the muffin mixture. Mix just enough to combine.


  • This sometimes happens if you over mix (same with banana cake). Just stir it enough to combine the ingredients.
