These are the only pancake mix that I buy, appart from making them from scratch myself. These are the only ones we actually enjoy, we love them with biscoff and nutella! Yummy.

Compared to most off-the-shelf mixers this is the best, and most wholesome, without making yourself from separate ingredients.
Do not over-mix. Can be mixed in a bowl to make smaller batches or for a a more thorough mix without the risk of over-shaking to blend all the ingredients.

This is without a doubt the best pancake mix at the supermarket hands down. I have tried, tested and experimented with all and I mean ALL the pancake mixes available at the supermarket. That mean’s Coles, Woolworths and Aldi. I have to come to the conclusion none of them work at all, the majority of them ask for water which makes the pancakes flavourless and far too doughey and chewy and dense even if you don’t overshake or overmix. This is the the only pancake mix I have found that does exactly as it says on the label and tastes absolutely great. I usually buy McKenzies Wholemeal spelt flour and make them myself from scratch but these were so good not even my family could tell these were from a mix. The secret is here we are being asked to use real whole milk, a large egg and melted unsalted butter. Also do not shake the batter in the jar for too long, as with overmixing in a bowl, you will overshake the batter and they will only yield lifeless, tough, dense, chewy and doughey pancakes. Not the thick, light and fluffy and almost crumbly pancakes you deserve and should be eating. I never thought a pancake mix would be as convenient as this has been, for many years for convenience I have been buying the Pancake Parlour mix, the one that comes in that yellow box. They are not bad either but they are made from a blend of maize flour and wheat flour. I do prefer this one as Spelt is much more wholesome and delicious. Very surprised by my findings I will now buy this from on when I want to save some time or when I want pancakes out camping. Thanks Donna Hay! P.S Word of advice, this can be taken out of the jar and made in the usual way in a mixing bowl and with a wire whisk or wooden spoon. A trick I like to do is let the batter rest in the mixing bowl for 30 minutes to an hour, sometimes I even leave it overnight, this way the ingredients amalgamate much better and the batter will rise somewhat and look thick, gluggy, gaseous and beautifully aerated. Once you ladle or spoon what should be a rather thick batter onto your griddle or frying pan, you will have the most fluffiest, light pancakes you will ever eat. DO NOT OVER-MIX YOUR BATTER! There is a tendency with shaker method pancakes such as these to over shake, once you have done this, very similarly to overmixing in a mixing bowl, you will have overworked the gluten in the batter, and your pancakes will become tough, dense, chewy and doughey. Please remember this, also your melted butter in the batter is enough fat to cook the pancakes without having to lay down extra butter, or oil for frying in the pan, and since you should be using a non-stick pan it should be relatively easy to flip and no mess will result. I highly recommend this product for time poor souls.
The donna hay spelt flour pancake mix is a Sunday lifesaver for the family. They come out fluffy and golden and the vanilla bean really stands out. Well done Donna Hay
Now before I really start I must admit I really don’t find shaker pancake mixes to work that well or taste as nice as home made …that being said this donna hay spelt flour pancake mix as far as taste goes is an exception and is down right easy and delicious. I always found that when I added the liquid to these other shaker pancake mixes I was never really totally happy as there was always that goopy bit that would refuse to come out. Donna’s mix does not come in the same bottle design as these others but instead comes in a plastic 285g jar/bottle. The directions state how to prepare the pancakes but I actually used a bowl and whisk. I probably have no doubt that Donna’s way works and probably works well but my preferred way works extremely well for me and is the way I am most comfortable with. There is also the fact that the way I actually mix up these pancakes means I can use 1/2 the mix if I wish and the other 1/2 is safely and contaminate free to use at a later stage. I tip 1/2 the mix into a bowl, into a cup I add 1/2 the required milk and butter and lightly warm in the microwave. Then its only a matter of adding the warmed milk and butter to the pancake mix, lastly adding a small egg and giving a good whisk. These divine pancakes are make from spelt flour : spelt is an ancient grain and although it is not able to be consumed by coeliac’s it is more tummy friendly than normal flour for non coeliac’s . Have to admit nothing bets home made but for convenience/ease these certainly come in second.
