I use this a lot when making miso salmon, and also with soy sauce to use as a dipping sauce when eating dumplings. The taste just adds something extra to these dishes.
This rice wine vinegar is great to add to cooked, cooled rice before rolling up in nori sheets for sushi. It has a very strong but nice taste, and not much is needed to get the required subtle flavour through the rice.
