This recipe was made up by my 10 year old one day when she wanted scones but did not have the right things. I allow her to experiment with cooking and most times they turn out not too bad. She adds different things at times to it as her older brothers will eat anything they have not had to cook.


Ingredients (makes 12 mounds/texan muffins)

  • 1 can creamed corn
  • 1 can self raising flour
  • 1 can grated cheese

Method

  1. Open creamed corn and keep this tin for the other ingredients. Place creamed corn into bowl.
  2. Using tin from corn fill with S R Flour place into bowl and do the same for grated cheese. Mix together to everything is well mixed.
  3. Flour a tray or if making in muffin tin place paper in. Place mounds of mixture onto tray leaving space between.
  4. Cook in oven for 15-20 mins until golden at 180c. Place them on to a cooling tray or eat straight from the tray.

Notes

Do not add too much liquids to this and mixture is moist , sticky when mixed. Bacon bits, spicy sauces and other things can be added. Serve with butter or eat dry.

  • Glad to see people are still enjoying this recipe that I placed on here in 2014. Just do not understand it saying that hazel placed it there. It does not matter, it was not mine anyway but my oldest daughter’s.
