Ingredients (serves 1)

  • 1/2 cup Sundried Tomatoes
  • 8 Kalamata olives
  • 8 green oilves
  • 8 pepper stuffed green olives
  • 100gm Goat's cheese feta
  • 1/2 cup Olive oil
  • 150gm Salmon fillet (Skin off)
  • 2 teaspoon Olive oil
  • 2 teaspoon Mix Italian herbs
  • 2 teaspoon Freshly ground pepper

Method

  1. For antipasti, combine sundried tomatoes, all the olives and feta. Drizzle with generous amount of Olive oil. (This would yield about 4 serves worth of antipasti)
  2. For salmon, combined Olive oil, pepper and herbs in a bowl. Mix and spread on salmon. Grill on medium heat for 5 minutes on each side.
  3. Serve immediately with some lemon and extra sides :) For me, I am having half an avocado!

  • You can never have enough olives or feta cheese. What a great idea, having it as a side dish for a main course. I’d definitely throw some sliced red onion into the mix, coz I do love my onions.
