These apple health balls are a quick, easy and healthy snack and great for school lunchboxes!

Ingredients (makes 10 balls approx )

  • 1 cup Dried apple
  • 1 cup pitted dates
  • 1/2 cup quinoa flakes
  • 1/2 teaspoon cinnamon
  • 1/2 cup desiccated coconut (for rolling)

Method

  1. Place all ingredients into the food processor.
  2. Turn the food processor on and blitz until desired consistency (fine or slightly chunky depending on what you like). At this point check if you need a little bit of moisture. If you do, add say a teaspoon - tablespoon of water and blitz for a few seconds until you see the mixture start to bind.
  3. Roll mixture into balls and roll in coconut! ENJOY!

  • Could you use fresh shredded apple instead?

    • You may need to bake it in the oven in that case.

  • Nice one ! However high dried fruit (=sugar) content 2 cups in compare to 1 cup other ingredients, making it not as healthy as it seems.
