These Apple Ring Pancakes are a lovely naturally sweet treat for breakfast…or anytime!


Ingredients (makes 10 small pancake rings)

  • 2 medium size Apples ( I used pink lady) Peeled & Cored
  • 1 large Egg
  • 2 TBS Melted butter
  • 1 tsp Vanilla extract
  • 3/4 cup Milk
  • 1 cup Flour (plain)
  • 2 tsp Baking powder
  • 1/2 tsp Cinnamon
  • pinch Salt

Method

  1. In a large bowl mix egg, butter, vanilla extract and milk with a whisk.
  2. Sift in flour, baking powder, cinnamon and salt and mix the batter until smooth
  3. Cut the apples into 1cm slices
  4. Heat pan on medium heat and melt butter. Dunk each ring into the batter and place on pan.
  5. Wait until bubbles form on the batter, then flip. Cook until golden on both sides
  6. Top it off with your favorite toppings and enjoy!

  • We make these a lot in the Netherlands. I dust them here in cinnamon (no extra topping) and my kids love them in the lunchboxes.

  • I would be tempted to try green skinned apples as they would stay crisper. Not sure if they are as sweet as red apples though.

  • I’ve just made these for supper. I used Granny Smith apples. The apple slice could be a bit softer. Next time I’ll slice the apple thinner than 1cm. They are yummy :)


    • Maybe the Pink lady apples I used had a softer texture as mine weren’t crunchy at all!? Good luck experimenting and I am glad you liked them !
