This is a combination of my favourite sponge recipe and those left over apples from lunch boxes etc. All of our family request this every time we get together and it’s a great one to gift to friend when they may need a hand or just a surprise.

Ingredients (makes 16 Slice)

  • 4 Large apples
  • 225g Soft butter
  • 280g Sugar
  • 1 tsp Cinnamon
  • 4 Eggs
  • 2 tsp Vanilla essence
  • 350g Plain flour
  • 2 tsp Baking powder


  1. Preheat oven to 180c and line a 20x30 approx slice tray. Peel and dice apples, put in pan with 1/4 cup of flour and cook on low heat until apple begins to break down and turn off to cool.
  2. Cream butter and sugar until pale, add eggs one at a time and vanilla. Slowly add in remaining flour, cinnamon and baking powder until combined.
  3. Spread 2/3 of mix evenly into baking tray, scatter apple on top and put blobs of remaining mixture on top and level. Cook on 180 for 45 minutes.

Notes... This is delicious warm with cream or ice cream.
