These are my go to muffins when I am craving something sweet. They are easy to make and a lot of the ingredients you would already have in your cupboards. Everyone loves them too. I also sometimes don’t put so much butter in them and instead put vegetable oil or I make a banana paste instead to make it a bit healthier.


Ingredients (makes 12 )

  • 125g butter, melted and cooled
  • 1/2 cup white sugar
  • 1 egg
  • 3/4 cup milk
  • 1 1/2 cups SR Flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups diced apples
  • 1/2 cup sultanas

Method

  1. In a bowl combine butter, sugar, milk and beaten egg
  2. Sift in flour, cinnamon, salt and mix
  3. Fold in diced apples and sultanas
  4. Spoon mixture in slightly greased muffin pans and sprinkle on extra cinnamon if you wish to add an extra crunch on top
  5. Bake in a preheated 200 degree oven (180 degrees fan forced), for 15-20 minutes or until golden brown
