Healthy biscuits for the lunchbox.


Ingredients (makes 40 )

  • 180 gms Butter
  • 230 gms Honey
  • 2 cups Self raising flour
  • 3 cups Cornflakes
  • 1 cup Dried apricot diced

Method

  1. Preheat oven to 170C. Melt butter and honey in a saucepan. Cool for a few minutes and then fold in remaining ingredients.
  2. Drop large teaspoons of the mixture on to a greased baking tray. Bake for 10-12 minutes.
  3. Allow to cool slightly before removing to biscuit rack.

  • Quick and easy after tea treat.

  • Yummy, I am currently trying to use up huge amounts of dried apricots, thanks to my parents and their preserving skills, I whipped up a batch of these and yummy, tomorrow I am off to get more cornflakes and will be making several batches and hope they freeze well, I do not think they will last long anyway, thankyou got sharing a simple lovely recipe.
