Delicious Smoothie, Great on a hot day


Ingredients (serves 2)

  • 1 cup no-added-sugar pie fruit apricot halves
  • 2 175g tubs apricot and mango 99% fat-free soy yoghurt
  • 1/2 cup calcium-enriched reduced-fat soy milk
  • 8 ice cubes

Method

  1. Blend apricot, yoghurt, milk and ice until smooth. Pour into chilled glasses. Serve

  • unusual – I would never have thought about an apricot smoothie – but I love apricots – what a great idea – I cannot wait to give this a try – I especially love that you have made it budget friendly by using tinned apricots – they can be so expensive fresh!
