Avocado or prawn are nice too for this baby sushi.


Ingredients (makes 20 Baby sushi)

  • 1 cup Sushi rice
  • 1 1/2 cup Water
  • 3 tbs Rice wine venegar
  • 1 tbs Sugar
  • 3 sheets Nori
  • 2 Cucumber
  • 100 gr Smoked salmon

Method

  1. Place rice and water in a saucepan, cover and bring to boil. Reduce heat to simmer for 10 minutes. Turn off heat and leave for 10 minutes covered.
  2. Spread rice into a container and allow to cool, then sprinkle with combined vinegar and sugar. Stir thoroughly.
  3. Pour rice into sushi mould and press down. Line nori sheet with 1 cm width then put the rice from the mould and salmon on the top. And other half with cucumber on the top.
  4. Place on a serving platter, cover with plastic wrap and refrigerate for 20 minutes to allow the nori to soften. Serve with soy sauce.

  • My kids favourite lunch option. They love all the fillings even eel. You do have to watch the fillings with mayo as they can push up the sugar level. I like to make these while the kids are at school and they like having them as a snack when they get home. Nice and healthy.

  • I love sushi/hand rolls for myself, and thankfully my son does too. Whilst I usually buy them, this is a great idea to make at home. And very simple. Thanks for the recipe.
