Great as a breakfast or healthy dessert – sometimes I also add a little sprinkle of toasted muesli as well as the walnuts.


Ingredients (serves 2)

  • 1 Whole pear
  • 150g natural yogurt
  • 30g Crushed walnuts
  • 1/2 cup apple juice
  • 1/2 cup Water
  • 1tbs Honey

Method

  1. Slice your pear in half and remove the core, place in small baking dish flat side down and pour over water and apple juice, drizzle with honey. Cover pan loosely with foil and bake about 35 minutes or until tender.
  2. Remove pears once cooked,pour the leftover baking liquid into a small saucepan and reduce over medium heat until about 1/4 cup of syrup remains; set aside to cool.
  3. Pour yogurt into a bowl and place the pear face down in it, top with crushed walnuts and drizzle your reduced syrup over the top!

Notes

Pears are a great source of natural soluble fiber, this dish is filling and a great way to start the day!

  • Nice one ! Instead of honey I would use coconut palm- or yacon syrup.


    • By lack of apple juice I squeezed a fresh orange and used it’s juice and a little bit of peel to poor over the pear together with some cinnamon, it was tasty !
