A nice rich and creamy cake, not too sweet, can be served with fruit!


Ingredients (serves 8)

  • 250g Cream cheese
  • 500g Greek yogurt
  • 1 cup caster sugar
  • 4 Eggs
  • 1 tsp Vanilla extract
  • 1 pkt granita biscuits
  • 100g melted butter

Method

  1. Melt butter and crush biscuits in a food processor until fine, stir in butter and mix to a crumbly consistency. spray a spring form cake tin and mould your biscuit mix for the base.
  2. In a food processor, or with a mix master blend cream cheese, yogurt, sugar, eggs, vanilla extract and salt until mixture is very, very smooth.
  3. Pour into prepared pan and bake for about 50 minutes at 180'c (FF) until the cake is set and jiggles only slightly when gently tapped Cool to room temperature before refrigerating.

Notes

You can add in tinned apricots or pears for added flavour

  • I am a big fan of any type of cheesecake and keep ‘threatening’ to make one! This could be a great one for my first attempt. Yum yum!

  • The idea is nice and in base line very much like how I make cheese cakes. I prefer to make them sugar free though and don’t use store bought biscuits for the base as these are quite processed and have quite some sugar.
