A really nice banana cake.


Ingredients (makes 12 squares)

  • 125g Butter
  • 200g Sugar
  • 1 heaped tsp Cinnamon powder
  • 2 Eggs
  • 3 Ripe bananas Mashed
  • 2 tbsp milk
  • 180g Self Raising flour
  • 1/2 tsp Bicarb soda

Method

  1. Cream butter and sugar.
  2. Mix in Egg, flour, cinnamon powder, milk and Bicarb. Mix well
  3. Add mashed banana and pour into lined tin approx 25 x 25cm.
  4. Bake 190C for 20 mins until cooked.

Notes

if using a smaller tin to make higher cake cook a little longer to make sure cooked in the middle. To test if cooked put a skewer in and it should come out clean. You can add a handful of nuts or raisins for variation.
