Lovely for afternoon tea. Fantastic for lunch boxes or an after school snack and a great way to get fruit and nuts into children.


Ingredients (serves 12)

  • 1 3/4 cups Plain flour
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Bicarbonate of soda
  • 1/2 teaspoon Salt
  • 3/4 cup White sugar
  • 85 grams Butter softened
  • 2 Eggs
  • 1 cup Mashed banana
  • 1/2 cup Chopped walnuts

Method

  1. Grease a 10x20cm loaf tin. Preheat oven to 180 degrees celcius.
  2. In a large bowl sift together flour, bicarbonate of soda, baking powder, salt & sugar. Add butter, eggs, mashed banana & walnuts. Beat until well blended.
  3. Pour battter into prepared tin & bake for about 1 hour or until a skewer inserted in the centre of the cake comes out clean.

Notes

For a healthier alternative replace white sugar with brown or raw.
