Delicious waffles that are whipped up in a flash and will satisfy the hunger crash.
My berries are coming along very nicely, these waffles were made with a combination of my fresh early bloomers and store bought …but the taste of fresh garden grown are simply delightful and truly is pure bliss.


Ingredients (serves 20)

  • 60gm Nuttelex (melted)
  • 13/4 cups Low fat lactose free milk
  • 2 Eggs
  • 1 teasp Vanilla extract
  • 2 cups Gluten free plain flour
  • 1/4 cup Xylitol
  • 4 teasps Gluten free baking powder
  • 1/2 cup Mixed berries

Method

  1. Preheat waffle iron.
  2. In a microwave safe bowl melt the nuttelex (then let cool for a minute or so). Add the milk, eggs and vanilla extract and give it a good whisk.
  3. In a separate large bowl sift flour, xylitol and baking powder. Make a well in the center.
  4. Add wet ingredients into the well (at intervals) and whisk well to incorporate. Fold through the cut/halved berries.
  5. Spray the waffle iron with cooking spray. Ladle dessert spoons of mixture into waffle sections and close the lid. Cook till ready light appears or to manufacturers instructions. Remove waffles and place on serving platter.
  6. Repeat/continue with remaining batter mix.
  7. Serve with desired topping (my favourite is Berry Coulis) ENJOY!
  8. RECIPE FOR: BERRY COULIS. Place 2 cups berries with ¼ cup xylitol and the juice of half a lemon in a saucepan and allow to simmer until the berries release their juices. Continue to simmer until the liquid is reduced by half, roughly 15-20 minutes. Pass through a fine sieve to remove the seeds and allow to cool before using.

Notes... These divine waffles are made with nuttelex, lactose free milk, gf flour and xylitol but feel free to use regular ingredients if you wish ...they will turn out just as delish ...but for two of us here the wish is for low allergy on your dish. Added note: Xylitol is a sugar alcohol used as a sweetener. The name derives from Greek: ξύλον, xyl[on], "wood" + suffix -itol, used to denote sugar alcohols. Xylitol is categorized as a polyalcohol or sugar alcohol. xylitol or stevia better? Like stevia, xylitol is a good sweetener option, though it will have a small effect on blood sugar since it does contain some carbohydrate. ... Xylitol, however, has been shown to have added benefits for a person's teeth, namely preventing tooth decay.

    • Hi mom94125 the waffle maker I use is a Kambrook sunny hunny but I have seen waffle makers at Big W, K Mart and Target and they are so cheap. The beauty of a waffle maker is the fact that it cooks both sides at once and it is extremely fast/quick. I will attach a picture for you. The Target one is only $15 also you can pick up great bargains on gum tree. cheers cherz.
