If you feel you have too much cake batter for your cake tin place two small portions into 2 ramekins and cook for about 15- 20 minutes and you will have lava cakes ready before your cake is done!

Ingredients (serves 10 | makes 10 portions)

  • 1 1/2 cups self-raising flour
  • 1/2 cup coconut oil
  • 1/4 cup honey
  • 1 cup white sugar
  • 200g chocolate
  • 1/4 cup cocoa powder
  • 250g butter
  • 2 eggs
  • 1 1/2 cups hot water
  • 2 tsp vanilla essence


  1. in a pot add the sugar, cocoa powder, chocolate, honey, vanilla essence, hot water and coconut oil and place on medium-low heat until well combined
  2. let the pot cool down ( just to make sure you don't cook your eggs when mixing all ingredients together), in a bowl place the flour and eggs together, grab a whisk and start pouring the warm chocolate mixture into the bowl until well combined
  3. in a 20cm round non-stick pop out tin, butter the sides and base and then coat with flour, then add the mixture to the cake tin and cook in a 150-degree oven for 55 to 60 minutes or until just cooked through

Notes... This cake seems to be a hit and is super moist and rich and goes perfectly with some thickened cream on the side.
