A delicious crumbly savory biscuit – great with a cheese platter.


Ingredients (makes 24 )

  • 150 grams Parmesan cheese grated
  • 1 cup Plain flour
  • 125 grams Unsalted Butter
  • 1 1/4 teaspoons freshly cracked black pepper
  • 2 pinches Cayenne pepper

Method

  1. Mix together cheese,flour,black pepper and cayenne pepper in a food processor until it starts to clump together
  2. Turn mixture onto floured board
  3. Form mixture into a log 5 cm in diameter Wrap in plastic wrap and refrigerate for at least 1 hour ( can be left at this stage for up to a week )
  4. Pre heat oven to 180 deg. Slice logs into 5mm slices and place onto paper lined oven trays
  5. bake for approx. 15 minutes or until they are turning a light golden brown
  6. Can be served warm or cold

Notes

Mixture seems very soft before you sit it in the fridge... it firms up nicely after an hour and is easy to cut with a sharp knife
