Who doesn’t love mousse! This Blackcurrant Mousse is stunning!


Ingredients (serves 6)

  • 1 3/4 Teaspoons Powdered Gelatine
  • 3 Tablespoons Boiling Water
  • 2/3 Cup Barker's Lite Blackcurrant Fruit Syrup
  • 3 Egg Whites
  • 1 Cup (250ml) Fresh or Whipping Cream
  • 3 Tablespoons Maple Syrup (Optional)
  • A Few Mint Leaves
  • Lime zest

Method

  1. In a small bowl dissolve gelatine with boiling water. Add dissolved gelatine to the lite blackcurrant fruit syrup, mix well and allow to stand in a cool place or in the fridge while you prepare the remaining ingredients.
  2. Place egg whites in a bowl and whip to stiff peaks. Place cream in a separate bowl and whip to stiff peaks. Add the whipped cream to the whipped egg whites, add maple syrup, if using and chilled blackcurrant and gelatine syrup mixture. Whisk to combine.
  3. Divide mousse between 6 serving glasses and place back in the fridge for 30 minutes to set.
  4. Remove from the fridge and top each tartlet with a little lime zest before serving. Serve a couple of mint leaves or sprigs of baby mint on the side.

    Try a mousse of blackberries and egg whites, simple and more pure.

  • This recipe makes me think about a traditional Dutch recipe my mum used to make with egg whites and berry juice. Easy and actually quite nutritious when you use pure ingredients.

  • What an interesting flavoured mousse. Not a combination I would normally have even considered. We loved mousse growing up, but it’s not something we have had for many, many years. A great excuse to introduce it to our family meal planning.

  • I remember my mum used to make a mousse with egg whites, it was just egg whites, berry juice / pomegranate juice and a tablespoon of raw honey…..simple, pure and oh so fluffy !
