My kids love fruit bars but many of the ones sold in the shops are full of nasties, preservatives and packed with sugar.

These homemade fruit leathers are full of the good stuff – lots of blueberries and no added sugar.


Ingredients (serves 4 | makes 4 )

  • 500g blueberries
  • 1/2 juice of a lemon
  • 1/2 tsp liquid stevia
  • 3 tbsp coconut oil, melted
  • 2 tbsp agar agar
  • 1/2 cup water

Method

  1. Place all ingredients into a blender and blend until smooth. Line a baking tray in cling wrap and pour the blueberry mixture over the top. Spread evenly to the edges.
  2. Place tray in the fridge to cool for at least 2 hours or ideally overnight to set.
  3. Remove from the tray and cut into thin strips.

  • A great healthy option for kids lunchboxes.
