This rice is gluten free and low GI which is suitable for diabetics. It keeps you feeling fuller for longer.
Since I started cooking rice this way, the rice always turns out lovely and fluffy. You want to eat every grain on your plate. Before that it, it was hit and miss.


Ingredients (serves 4)

  • 2 cups rice ( I use Sunwhite low GI or Doongarra )
  • 3 cups water

Method

  1. Put rice into a saucepan to suit. Add water. Stir with fork. Bring to the point where it has just started to boil.
  2. Immediately turn down heat to lowest setting 1. Stir. Cover with saucepan lid and simmer on low heat for 15 mins.
  3. Turn off heat. Allow to sit for 5 mins. Fluff up with a fork and serve with main course.

Notes

For every cup of rice, I use 1 1/2 cups of water ( Sunwhite low GI or Doongarra Rice). For other rice, follow packet instructions.
