This broad bean dish is great for vegetarians!


Ingredients (serves 8)

  • 2 cups Small broad beans
  • Water
  • 2 Tomatoes
  • 1 Tbsp Cumin
  • To drizzle Olive oil
  • 1 Tbsp Salt
  • 1 Tbsp Lemon
  • 1 Onion

Method

  1. Soak beans overnight. Add enough water to cover then some more.
  2. Drain and rinse beans. Add enough water to cover then some more. Simmer for 6 hours, adding water when required.
  3. Drain remaining water. Dice tomatoes and onion and add, continue simmering for 5 minutes.
  4. Add remainder of ingredients, stir and serve.

Notes

I love eating this with flat bread such as Lebanese breàd.

  • I’ve never really eaten broad beans. I eat a lot of other legumes but never really ate these ones. I’m sure they are tasty in this recipe but I don’t find the picture very appealing..

  • I have never got into broad beans – I remember buying some when I was first married and they were bitter and horrid! I could do same with green beans :)

  • Wouldn’t simmering for 6 hours kill the broad beans? I enjoy eating broad beans, but not if the don’t taste like broad beans
