Found this dip & as it is very chunky thought to use it as a pasta base sauce.


Ingredients (serves 2)

  • 250 gram The Olive Branch - bruschetta w/ feta cheese & fresh dill dip or spread
  • 500 grams Pasta of choice
  • 2 cups Spinach leaves
  • 1 cup Cherry tomatoes
  • 1/2 cup Olives
  • 1/4 cup Grated Parmesan

Method

  1. Boil water then add pasta of choice, boil till al dente, drain pasta. Add bruschetta dip/spread, tomatoes, olives & cook through, add spinach leaves during last minute of cooking. Sprinkle with Parmesan cheese & fresh spinach leaves.

Notes

A beef ravioli pasta adds some meatiness however, gnocchi is also a great pasta for this dish.
