Doesn't smell of Brussels Sprouts when cooked so a great recipe for those who don't like the smell. Also a subtle flavour, not an over-powering Sprout taste.


Ingredients (serves 4)

  • 450gr Brussel Sprouts
  • 2 Potatoes
  • 4 cups Chicken Stock
  • 2 tablespoons Butter
  • 1 cup Hot Milk
  • 1 Onion, chopped

Method

  1. Discard stem and the tough outer leaves. If the Sprouts are large, cut them in half. Boil Sprouts for 5 minutes in water and drain.
  2. Salute Sprouts and onion in the butter for 2 minutes.
  3. Add stock and peeled and chopped potatoes. Boil until soft, approximately 15-20 minutes.
  4. Place in a blender or use a hand blender to puree.
  5. Add hot milk before serving.

Notes

My 2 year old ate 2 bowls without any issues. We added crutons to give some texture. You could add toasted flaked almonds or crispy diced bacon.

  • Um, no, I really don’t like Brussel Sprouts, weird aftertaste, but if you’re a fan I’m sure this would be right up your alley.

  • Interesting ! My concern would be that it would taste bitter as often I think Brussels sprouts become a bit bitter from cooking.

  • As a self confessed lover of all things green including brussel sprouts. spinach and asparagus, I was excited to find this recipe whilst browsing thru, I have tagged it and will make it this week, already thinking how some leeks would go with it, but I will make it according to the recipe to start with, thank you for sharing as not everyone appreciates how delicious brussel sprouts really are.

  • Thanks for sharing. I would not have thought to make soup with brussel sprouts. The recipe sounds tasty and I am going to give it a go.
