Spice up your night with this delicious Cajun Chicken dish. It isn’t overly spicy, just a nice heat to warm you up on a cold night.


Ingredients (serves 4)

  • 5 TBS Olive oil
  • 4 Chicken breast fillets
  • 55g Plain flour
  • 1 Onion, finely chopped
  • 1 Garlic clove, crushed
  • 1 Celery stick, finely diced
  • 1 small Green capsicum, de seeded and chipped
  • 1/2 tsp Dried oregano
  • 1/2 tsp Dried thyme
  • 2 Fresh red chillies (seeds removed)
  • 400g can Chopped tomatoes
  • 2 TBS Tomato paste
  • 300ml Chicken stock
  • Salt & Pepper

Method

  1. Heat the oil in a flameproof casserole dish. Add the chicken and cook over a medium heat, for 3-5 minutes on each side until evenly browned. Remove and set aside
  2. Reduce the heat to low, add a dash of oil then add in half the flour. Cook stirring continually for about 1 minute then stir in the remaining flour. Cook, stirring continually until mix has lightly browned. Slowly add in the stock while stirring until a smooth ‘sauce’ has formed
  3. Add in the onion, garlic, celery and capsicum, and cook stirring for 4 minutes. Add in the oregano, thyme and chillies, and cook for a further minute. Remove from the heat and stir in the tinned tomatoes, paste/puree and salt & pepper
  4. Return chicken to the pot, and simmer over a low heat stirring occasionally for 45 minutes, until the chicken is cooked through. Serve immediately
