This Caramel Hedgehog Slice Recipe gives you little squares of smooth delicious caramel flavour combined with a crunch from the biscuits. Very sweet, so only a small square is all you need!


Ingredients (makes 35 small squares of slice)

  • 250g Packet Plain sweet biscuits, coarsley chopped
  • 1/2 cup Desiccated coconut
  • 395g can Condensed milk
  • 125g Unsalted butter, chopped
  • 1/2 cup Brown sugar firmly packed
  • 1/4 cup Caster sugar
  • 1/4 cup Golden syrup
  • 1/2 cup White chocolate, Melted to decorate

Method

  1. Grease a small rectangular slice tin, and line the base and sides with baking paper, extending paper 2cm above the pan edges
  2. Place biscuits and coconut in a large bowl, and set aside
  3. Combine condensed milk, butter, syrup and sugars in a saucepan. Stir over a medium heat until butter is melted and sugar dissolved. Bring to the boil, and gently boil stirring continually and vigorously for about 5 minutes, or until slightly thickened. Remove from heat
  4. Pour over the biscuit and coconut mixture, and gently stir to combine.
  5. Press mix firmly into the slice tin, pressing and flattening evenly across the base
  6. Cool to room temperature before putting in the fridge to set completely for a minimum of 4 hours, or better yet overnight
  7. Melt the chocolate in a microwave safe bowl in short bursts, stirring in between until smooth and melted
  8. Lift the slice from the tin and cut into small rectangles. Place onto a sheet of baking paper on the bench and drizzle with the melted white chocolate
  9. Store in the fridge in an airtight container

Notes

These can be made a few days in advance and just stored in the fridge in an air tight container. Eat with in 5 days

  • Is there an alternative to the coconut?
    A lot of people i know including myself hate coconut – so much so that they only eat the tops of caramel slices and only eat the caramel and chocolate.
    Would love to know if you can just leave it out to save people throwing it out and wasting the base as the rest sounds delish.
