A wonderful healthy snack, great for the little ones lunch box or even better for mum to have with a nice cup of tea, enjoy this carrot and apple slice anytime of day.
Ingredients:
- 2 cups self-raising flour
- 3 teaspoons mixed spice
- 1 cup oats
- ½ cup sesame seeds
- 1 large carrot, grated
- 2 large apples, grated
- 1 cup of mixed dried fruit
- ½ cup low fat Greek or natural yoghurt
- 1 egg
- ½ cup apple juice or apple sauce
- ½ cup honey
Method:
Pre-heat an oven to 160 degrees and grease a shallow slice pan (3 cm deep, 16 x 28cm)
In a large bowl combine flour, oats, sesame seeds, carrot, apple, mixed fruit and mix spice. In a separate bowl whisk together yoghurt, apple juice, egg and honey. Gently fold the yoghurt mix through the flour mix, until well combined.
Spread the mixture into the greased slice pan and bake in pre-heated oven for 30 – 40 mins or until a skewer entered in the centre comes out clean. Remove from the oven, allow to cool before turning out and slicing.
