The Carrot Cake Overnight Oats recipe is so quick & easy! Tastes “naughty” but its completely “nice” … full of goodness and loads of energy to get you through the morning ! Also makes a great midday snack.


Ingredients (serves 6)

  • 2 cups Quick Rolled Oats
  • 1 cup grated carrot
  • 1 cup Yoghurt (plain or Vanilla is best for this recipe)
  • 1 1/2 cups Soy or Regualar Milk
  • 1/4 cup chopped pecans
  • 1/4 cup desicated coconut
  • 1/4 cup pepitas
  • 1/2 tsp vanilla paste
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp clove
  • 2 tbsp honey (i like to use makuka or raw honey)
  • 3 tbsp chia seed

Method

  1. combine all ingredients ...place in covered container & let sit overnight in the fridge
  2. serve with addition nuts & seeds sprinkled on top

  • I eat this every morning …well something similar ;) great way to get veggies into every meal
