Learning to make your own pizza bases is so rewarding!


Ingredients (serves 4)

  • 1/4 Whole pumpkin, diced
  • 1/2 Cup Cashews
  • 1 tsp nutmeg
  • 350g Bakers flour
  • 1 Tsp Yeast
  • 1 Tsp Mixed herbs
  • 2 Tbs Tomato paste
  • 80g Baby Spinach
  • 20g Pine nuts
  • 2 Shallots
  • 1/4 cup sliced black olives
  • 100g Australian feta
  • 1tsp dried parsley
  • 1tsp extra virgin olive oil
  • 1 Salt and pepper to season

Method

  1. Prepare your base by mixing yeast in 220ml of warm water then mixing with flour, knead for ten minutes then proof for 15, kneading again for another five, proof again for 10 minutes then roll out onto desired shape. Smear with one tablespoon of tomato paste and a sprinkling of mixed herbs, Bake in a moderate oven for 10 minutes (you dont want it fully cooked)
  2. Roast your diced pumpkin then place in a food processor with cashews and olive oil, blend until smooth and cream, season to taste. spread on your pizza base, top with another tbs of tomato paste, spinach leaves, olives, sliced shallots, crumbled feta, pine nuts and parsley flakes
  3. Return to oven and bake for a further 10 minutes or until feta is golden!

Notes

If you have a BBQ a pizza stone is a worthy investment!

  • I love homemade pizza.It always works.You can use whatever ingredient you have in hand as a toppings.I am using different grated veggies as a topping.Kids can’t see them as i hide them under cheese.

  • Beautiful ingredients, but sounds very heavy to me with cashews pine nuts and feta, don’t think I would be able to eat much of this.
