Ingredients (serves 12)

  • 500gm Cassava (grated)
  • 2 Eggs
  • 1 cup White sugar
  • 150ml Coconut cream
  • 30gm Butter

Method

  1. Place all of the ingredients in a bowl. Using an electric mixer, beat until well combined. Pour into a 22cmx7cm dish and bake for 1 hour on 180C, or until firm in the centre.
  2. Remove from the oven and allow to cool slightly.

Notes

You can easily get grated cassava from Asian stores in their freezer. Just defrost them and use them as per instructed :)
