Quick, easy and tasty. Also works to substitute the chicken for pumpkin and make it vegetarian.

  • 250g Mushrooms
  • 250g Cream cheese
  • 2Tbsp Garlic
  • 2Tbsp Chives
  • 3 Sheets of Puff Pastry
  • 1 packet Coleslaw
  • 1/3-1/2 cup Aioli
  • 1 Egg

Method

  1. Cut chicken in to 2cm pieces. Slice mushrooms. Cook chicken in frypan until golden. Add mushrooms and garlic cook until mushrooms are tender. Preheat oven to 180 degrees.
  2. Place puff pastry plastic side down on bench to defrost. Cut each sheet in to 4 squares. Place cream cheese and chives in a large bowl stir to combine to a smooth consistency. Add the chicken and mushroom mixture and combine. Add salt and pepper to taste.
  3. Place 1-2 tablespoons of mixture in each triangle. Fold over and press edges together to seal it close. Crack the egg in to a cup. Beat with a fork and use a pastry brush to brush over each triangle. Bake in an oven for 25 minutes.

  • Wow my daughter and I would probably love these chicken and mushroom triangles. We are huge mushroom fans and the filling in these is healthy and the cream cheese is something different instead of on toast.
