yummy pie, great with a salad.


Ingredients

  • 500g Chicken Breast, diced
  • 1 onion, diced
  • 2 rashers bacon, diced
  • 1 celery stalk, diced
  • 1 carrot diced
  • 3 mushrooms, diced
  • 1/2 cup frozen corn
  • 300mL cream
  • 1/2 cup chicken stock
  • 1 sheet short crust pastry
  • pinch black poppy seeds
  • pinch white chia seeds
  • spash milk
  • 1 tsp olive oil
  • 1 tbsp plain flour
  • 1 tsp oregano leaves
  • 1 tsp thyme leaves

Method

  1. heat frypan on medium/high. add oil then chicken. brown chicken then add onion and bacon. cook 3 mins, then add celery, carrot, mushroom and corn. cook 5 mins.
  2. stir in plain flour, cook a further minute. add cream and stock, let bubble and thicken whilst stirring.
  3. once thick, reduce heat, stir in oregano and thyme. transfer mix to pie dish and top with pastry. brush with milk, sprinkle with seeds then oven bake 180* for 20 mins.

  • The celery is a surprise ingredient for a pie and I love the idea. I’m not sure I have seen chia seeds in a pie recipe before either. Certainly a different flavour to other homemade pies
