This Chicken Cacciatore Pasta is a delicious pasta dish that can be whipped up with minimal effort, but has maximum taste!


Ingredients (serves 4)

  • 500g Chicken mince
  • 1 Onion, diced
  • 1 clove Garlic, crushed
  • 400g can Crushed tomatoes
  • 1/2 400g can Tomato soup
  • 1 large Carrot, grated
  • 3/4 cup Baby spinach, shredded
  • 1 500g bag Pasta (use what ever you wish)

Method

  1. Cook the onion and garlic over a medium heat for a few minutes until they have softened. Add in the chicken mince, and cook until its cooked through
  2. Add in the tomatoes, soup and carrot, and simmer for 10 minutes over a low heat
  3. Meanwhile cook the pasta as per packet directions. Drain
  4. Just prior to serving, add in the baby spinach and allow it to wilt slightly. Serve sauce over the cooked pasta

  • I’d totally forgotten about this delicious recipe! I’m keen to make it. I like to add parsley and olives to mine and serve it with rice! So many variations to this recipe, which makes it great!
