I wanted something fresh, healthy and filling and this certainly hit the spot! Great for BBQ’s, a light dinner or even as a easy weekday lunch


Ingredients (makes 1 large pasta salad)

  • 500g tray Ingham's Diced chicken breast
  • 500g Bag Fusilli pasta
  • 1 Small jar Pesto
  • 1/2 punnet Cherry tomatoes
  • Danish Fetta
  • Red onion, sliced finely
  • Basil leaves
  • Rocket, cut into thin pieces

Method

  1. Cook the pasta as per directions in salted water until just tender. remove from heat, drain and allow to cool completely
  2. When cooled, add pesto and mix through until completely coating the pasta, and season with salt and pepper. Set aside
  3. Cook the chicken in a small amount of oil until cooked through and golden.
  4. Add the chicken to the pasta, and stir until pesto is coating the chicken
  5. Pour into a large bowl, and add cherry tomato, red onion, basil leaves chopped rocket and finally crumble the fetta over the top. Serve

  • A salad that is relatively easy to make and I am sure delicious to taste. On my list to make in summer to eat.
