A really easy and very tasty soup!


Ingredients (serves 4)

  • 4 Carrots, diced
  • 4 Celery sticks, diced
  • 1 litre Chicken stock
  • 500 mls Water
  • 1 cup Self raising flour
  • 1 Tbsp Baking flour
  • 1 cup Cooked brown rice (or any rice)
  • Extra water

Method

  1. Bring the stock and water to the boil. Add the carrot and celery. You could also add some curry powder, herbs or pepper to flavour the broth.
  2. In a big mixing bowl stir the flour, baking powder and rice to form a dough. You may need to add some water to make a stiff dough.
  3. Turn off the soup broth. Drop spoonfuls of the rice dumpling dough into the soup. Cover and let steam for 10 minutes until the dumplings have roughly doubled in size.
  4. Serve! Easy and yummy.

  • Yum. Home made chicken soup is always made here with kept over roast chicken carcass. Love the addition of dumplings, really makes a meal of it
