A hearty evening meal packed with the goodness of Brussel sprouts


Ingredients (serves 4)

  • 2 Chorizo, cut into pieces
  • 1 lge red capsicum,chopped
  • 500 grams tomato,diced
  • 400 grams brussels sprouts,
  • 1 med brown onion ,chopped
  • 2 cloves garlic, chopped finely
  • 2 chillies
  • 1/3 cup olive oil
  • 1/2 cup white wine
  • 1 teaspoon season all
  • 2 teaspoons dried oregano
  • 1 teaspoon chicken stock powder
  • 500 grams penne pasta

Method

  1. Heat some of the oil in a frypan and add chorizo and onion, cook gently until onion is soft
  2. Criss cross cut into the base of the brussels and boil until just tender.Drain, and cut into halves
  3. Push chorizo and onion to one side and place brussels ,cut side down in pan to brown up.
  4. Add chopped capsicum and diced tomato, garlic,chilli, season all and stock powder and simmer for a few minutes, stirring occasionally
  5. Add white wine,the rest of the oil and oregano. Simmer for 5 minutes.
  6. Cook pasta in boiling salted water until al dente.Drain Stir the the chorizo and Vegetable mix through the cooked pasta
  7. Serve with a sprinkle of parmesan cheese

Notes

Even if you are not a huge fan of brussels sprouts, give this a try . When brussels are in season , cooked until just tender and finished off in the fry pan they are really quite mild , with a 'nutty' flavor. The chilli is optional but if you like spicy ... keep it in !!

  • I actually cant wait to try this! We used to eat brussel sprouts as kids but my husband doesn’t like, surely mixed in like this he will be willing to give it a crack!

  • Anything that can get my family to eat different veggies is great. I think that a lot of people have had their Brussels sprouts boiled too long.

  • what a great way to use an under utilised vegie of the brussel sprouts – my husband loves brussel sprouts and I think he would really love this recipe so thank you very much for sharing :)


    • I agree – an under utilised vegetable and they are so good for you and so yummy. Happy to eat a bowl full of them with a drizzle of butter. I have also eaten them with roasted pine nuts – yummy!
