A tasty cakey cookie which is great for afternoon tea.


Ingredients (makes 24 biscuits)

  • 2 ripe bananas
  • 125 grams butter
  • 3/4 cup brown sugar
  • 2 cups self raising flour
  • 1 cup rice bubbles
  • 2 tablespoons cocoa

Method

  1. Preheat oven to 200 degrees and line baking trays.
  2. Cream the butter and sugar together. Mash the banana and then stir into the butter and sugar mix.
  3. Add the flour, cocoa and rice bubbles and stir together.
  4. Bake for 15-20 minutes.

Notes

This is more of a cross between a cake and a cookie as they are quite soft but hold shape like a cookie.
