I was craving coconut and gritty sugar. These cookies are super easy and very yummy with a cuppa or an additional sweet treat for the lunch box or cookie jar filler.


Ingredients (makes 34 Cookies)

  • 2 cups Self raising flour
  • 1 cup White or raw sugar
  • 1 cup Desiccated coconut
  • 1/2 cup Chocolate chips
  • 250 grams Butter melted

Method

  1. Preheat oven to 180 and line 3 baking trays.
  2. Place all dry ingredients into a mixing bowl. Melt butter in saucepan or microwave and let cool slightly so as not to melt choc chips.
  3. Combine and put tablespoon scoops onto tray 2 cm apart. They don't spread, I fit 14 per tray. Bake for 15 to 20 minutes or until slightly golden.

  • This one with brown sugar as we do not store the other ones in the house. They came out really great, going to see whether I can change this for some of my children who can not eat this.

  • Too much sugar for me, I would use at least half of the amount of coconut palm sugar.
