This recipe is dead easy to make and can be made from whatever leftovers you have. The sweet potato mash is lovely with the parmesan cheese. Bonus novelty factor for my kids when they eat out of a ramekin!

Ingredients (serves 4)

  • 200g minced beef
  • 1 carrot, grated
  • 1 zucchini, grated
  • 1 sweet potato, mashed
  • parmesan cheese

  1. Cook sweet potato in boiling water until tender, then mash. Set aside.
  2. In a frypan, cook minced beef until browned. Add the carrot and zucchini and cook for another 3 minutes.
  3. Scoop the beef mixture into a small ramekin. Top with mashed sweet potato and then sprinkle parmesan cheese on top.
  4. You can either pop the ramekin in the oven on 200C for a few minutes to melt the cheese on top or just serve as is.

Notes... The ramekin on the left shows you the mince mixture prior to the sweet potato mash scooped on top.

  • Sweet Potato is a lot heathier than “ordinary” potatoes which are starchy and have high carbohydrate levels.

  • ooh yummy, looks very nice indeed.
