A comforting meal that everyone will enjoy, even fussy toddlers.


Ingredients (serves 4)

  • 1 Tbsp Oil
  • 1/2 Onion, diced
  • 2 Carrots, diced
  • 1 Clove Garlic, Crushed
  • 500g Beef Mince
  • 400g Chopped Tomatoes
  • 2 Tbsp Tomato Paste
  • 250ml Beef Stock
  • 1 Tsp Dried Mixed Herbs
  • Dash Worcestershire Sauce
  • 1 1/2 Cups Frozen Peas and Corn
  • 3 Large Potatoes
  • 1/2 Cup Warm Milk
  • 40g Butter
  • Handful Grated Cheese

Method

  1. Preheat oven to 190•C
  2. Heat the oil in a large frying pan over medium heat. Add the onion, garlic and carrot and cook until soft. Add the beef mince and cook until brown.
  3. Add the tinned tomatoes, tomato paste, beef stock, mixed herbs and Worcestershire sauce. Add peas and corn, then stir to combine. Cover and simmer for 30 minutes.
  4. Meanwhile, boil the potatoes until soft. Drain and mash with butter and milk.
  5. Spoon mixture into a casserole dish. Top with mashed potatoes and sprinkle with cheese. Bake for 30 minutes.

Notes

*I don’t actually measure the peas and corn, I just pour them in until I am happy with the amount. 1.5 Cups is just an estimate. *I am not an onion fan so never use more than 1/2 an onion, you can add more if that is how you like your food. Same with garlic.
